Your question is difficult to comprehend. If you are referring to farm raised fish versus fish raised naturally or organic versus non-organic food. There are various segments based upon performance of the item, price, convenience, service and balancing of the first four. Each group will have different items of importance. For instance seniors prefer convenience and service whereas a younger person may be more interested in price structure.

Well, I was originally thinking about the production of foodstuff using non-conventional methods. For example, the market for genetically modified organisms (GMOs), although not related to alternative agriculture, would be in the cotton textile industry and not the food industry because of the preference for organic food. Likewise, I was looking for the market for commercial hydroponics/aquaponics – is it the ethanol biofuel industry or the meat industry or elsewhere? Who are the people interested in these markets? Who are the ones doing market research for this industry?
That said, the attachment gives a wonderful insight into the retail of foodstuff – and the information would be exceptionally useful for food processing players. Would there be a similar study for production as well?
